About Dave’s Wine Revival

Dave’s Wine Revival is a new wine bar and cellar door located at 447 St Pauls Terrace, with an associated online store and a strong focus on authenticity - with absolutely “zero wine wankery.”

Our venue is designed to be a hub for the local community, delivering memorable experiences and genuine value every day through daily glass and bottle specials, cleanskins, events, and approachable service.

Our future plans include both the wine bar and cellar door being open from midday until late, seven days a week, for normal service and sales, plus events and functions.

About the Role

This is a hands-on leadership role responsible for the day-to-day operations, performance, and culture of the venue, including the bar, cellar door, online sales support, functions, and staff management.

You’ll lead from the front, helping turn first-time visitors into loyal regulars while creating an exceptional customer experience in a community-focused venue.

Key Responsibilities

Venue Operations

  • Manage daily operations across the wine bar, cellar door, and selected online order functions
  • Take responsibility for operational and financial performance of the venue
  • Ensure high standards across service, presentation, compliance, and customer experience
  • This is a "hands-on" role

Team Leadership

  • Lead, train, mentor, and support staff to deliver consistent, high-quality service
  • Manage staff performance and create a strong team culture
  • Foster customer retention through exceptional hospitality and leadership

Sales & Commercial Performance

  • Drive in-venue sales performance through initiative and innovation
  • Identify and implement opportunities to:
    • Increase average spend across by-the-glass, bottle, and takeaway sales
    • Improve walk-in conversion
    • Execute effective upselling behaviours
  • Deliver successful in-venue activations and promotions
  • Work closely with marketing to ensure campaigns convert into real customer outcomes

Inventory & Fulfilment

  • Oversee stock control and inventory processes
  • Manage labelling, packing, and dispatch of customer orders (training provided)

Strategy & Performance

  • Support strategy development and implementation
  • Deliver budget and KPI performance for venue and cellar door, and for online order fulfilment and customer service
  • Monitor results, identify opportunities, and continuously improve operations

About You

  • Strong hospitality experience in busy, high-volume venues
  • A natural operator and people leader who understands how venues make money
  • Commercially minded and focused on both customer experience and business outcomes
  • Proactive and observant - you notice what’s working and what isn’t, and take action
  • Passionate about hospitality and creating memorable customer experiences
  • Comfortable being hands-on, whether that’s serving customers, handling stock, packing orders, or improving venue operations
  • Driven by accountability, initiative, and results

REQUIREMENTS

  • Current Queensland RSA certificate, or willingness to obtain before commencing.
  • Previous hospitality experience in a busy bar, restaurant, cellar door, or similar venue.
  • Wine knowledge or genuine interest in wine, without the “wine wankery.”
  • Strong leadership skills, ideally as a current 2IC, supervisor, assistant manager, or venue manager.
  • Availability to work flexible hospitality hours, including evenings, weekends, public holidays, events, and functions.
  • Confidence using POS systems, handling stock, managing sales, and supporting customer orders.
  • Full working rights in Australia.
