JOB DESCRIPTION

Venue Manager — Pincho Disco

Pincho Disco is looking for a hands-on Venue Manager to lead one of Melbourne's most distinctive dining and late-night venues. This is a floor-first role for someone who leads from the front — running service, backing their team, and setting the standard by example rather than from an office.

What you'll own

You'll take full accountability for the venue's performance: driving labour and beverage margins, managing rosters to demand, and holding the team to clear standards on service, safety and compliance. You'll read the P&L, understand what moves it, and make daily decisions that protect GP and control cost without compromising the guest experience.

  • Strong, credible leadership — you develop your team, hold them accountable, and earn their respect
  • Solid command of venue financials: labour models, beverage GP, weekly forecasting and variance
  • Experience running a high-volume, quality-driven venue, ideally in a food-led or premium late-night environment
  • Calm under pressure, sharp on detail, and commercially minded

What's on offer

$90,000 + super, plus performance bonus.

Please note: You should have a minimum up to 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • Atleast 2 years experience in a similar role.
  • A genuine hands-on operator who's visible on the floor through service, not behind a desk
  • Strong, credible leadership — you develop your team, hold them accountable, and earn their respect
  • Solid command of venue financials: labour models, beverage GP, weekly forecasting and variance
  • Experience running a high-volume, quality-driven venue, ideally in a food-led or premium late-night environment
  • Calm under pressure, sharp on detail, and commercially minded
  • Availability across nights, weekends and peak trade
  • POS, rostering and stock/ordering systems experience (Tanda, SevenRooms, etc.)
  • Award interpretation — HIGA knowledge and experience in dealing with labour control.

Induction/onboarding required prior to starting role
