A classic bistro at heart with a touch of European supper club; Penelope is part restaurant, part lounge & part bar. Located on James Street, this is a place where you can begin the night with a romantic dinner and end it dancing on a table at 1am. A love child between a Soho hotel lounge, an NYC speakeasy and an LA Supperclub where the focus is never solely on the food or the drinks or the entertainment; rather, a perfect balance between all three.
Please note: You should have a minimum 2 years previous experience in the above or similar roles.
Minimum 3 years management experience, as well as hands on bar and restaurant service experience
Key understanding of dining fusing food, beverage, music and service
Hands on management style
The ability to work as a team player
Exceptional customer service, leadership and motivational skills
Availability to work late nights and weekends
Administrative skills including budgeting, rostering and stock control
Good knowledge of OLGR and industry regulations
