Union House is one of Richmond's best-loved pubs, a heritage corner venue on Swan Street with a public bar, an upstairs dining room, and a rooftop that fills up fast. It's the kind of place that does proper pub food seriously: elevated classics, quality steaks, a thoughtful wine list, and Victorian craft beer on tap. Busy, warm, and genuinely well-regarded in the neighbourhood.

The Role

We're looking for an experienced Sous Chef to work closely with our Head Chef across all aspects of kitchen operations. This is a hands-on leadership role, you'll be on the pass, running service, supporting the team, and helping maintain the standard that keeps people coming back.

What You'll Be Doing

  • Running service and supporting the Head Chef day-to-day

  • Leading and developing the kitchen team

  • Maintaining consistency, quality, and presentation across all dishes

  • Contributing to menu development and seasonal updates

  • Managing ordering, stock control, and waste

  • Upholding food safety and hygiene standards (HACCP)


RECOMMENDED SKILLS/EXPERIENCE

Please note: You should have a minimum up to 1 year previous experience in the above or similar roles.


REQUIREMENTS

About You

  • Proven experience as a Sous Chef, or a strong CDP ready to step up.

  • Comfortable running a busy service and leading a team under pressure.

  • You care about the food. Care about being consistent on every cover.

  • Organised, reliable, and a clear communicator.

  • Current Food Safety Supervisor certification (or willing to obtain).
