We’re looking for a Head Chef to take the reins at the Exchange Hotel in Horsham—right at the foot of the Grampians. Think hikes, fishing, fresh air, proper days off… and a kitchen you can actually run without losing your mind.
This is a well-established country pub with steady, consistent trade. Busy enough to keep you engaged, but not the kind of place that buries you every service. You’ll be leading a small team, owning the menu, and focusing on what matters - good food, done properly, for a loyal local crowd.
What you’ll be doing:
• Running your kitchen—team, systems, standards
• Delivering solid, quality pub food
• Managing stock, ordering and food costs
• Keeping things organised, clean and under control
• Adding your touch with specials and menu tweaks
What we’re looking for:
• A Head Chef or strong Sous ready to step up
• Someone who leads from the front and stays calm under pressure
• Solid operator—knows their numbers, prep and service
• No ego, just someone who wants a good kitchen and a good life

Trade qualified (Cert III in Commercial Cookery or equivalent)
Proven Head Chef or strong Sous Chef experience
Must have a solid understanding of food costs, GP and stock control
Strong leadership and organisational skills
Sense of humour
