Head Chef - New Mediterranean Venue (Sydney CBD) at Phillip Street (No Weekends)

JOB DESCRIPTION

We’re seeking a Head Chef to lead the kitchen of a brand-new Mediterranean venue opening in early June, located on Phillip Street in the heart of Sydney’s CBD.

This is a unique opportunity to join the founding team and shape a venue centred around Greek-influenced Mediterranean cuisine, with a focus on fresh, seasonal produce and elevated yet approachable dining.

Operating within a corporate environment, the venue will run Monday to Friday service only, focusing on lunch and dinner, with plans to grow a strong functions and events offering over time.

As Head Chef, you will take full ownership of the kitchen — from menu creation through to execution — building a high-performing team and setting the culinary standard from day one.

Key responsibilities include:

  • Designing and delivering a Greek-inspired Mediterranean menu
  • Leading, mentoring, and developing a professional kitchen team
  • Driving consistency, quality, and presentation across all services
  • Managing kitchen operations including rostering, ordering, and stock control
  • Maintaining strong cost control across food, labour, and wastage
  • Preparing the kitchen to support future functions and event service
  • Ensuring compliance with food safety and WHS standards
  • Collaborating with ownership on concept, direction, and growth

This is an ideal role for a chef looking for premium output without weekend service, while still being part of an exciting new opening.

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • Proven experience as a Head Chef or Senior Sous Chef in premium Australian venues
  • Strong experience or passion for Mediterranean / Greek cuisine
  • Demonstrated ability to lead and build kitchen teams from the ground up
  • Experience in menu development, costing, and kitchen financial management
  • Ability to deliver high-quality service in a structured, corporate environment
  • Strong understanding of food safety, compliance, and operational systems
  • Excellent leadership, communication, and organisational skills
  • Experience with functions/events or scalable service models (highly regarded)
