Part- Time Preferred or Casual Experience Staff Needed for Immediate Start

Our open kitchen sits at the heart of the dining room, wrapped in a vibrant mosaic of shattered ceramics that bursts into the space like a controlled explosion of colour. Here, guests don’t just eat; they watch, smell, anticipate, and become part of the unfolding story of the meal.

At its helm is Annita Potter, owner and chef, whose nine years as Executive Chef to Thai cuisine legend David Thompson led his Hong Kong restaurant to a Michelin Star in 2019 is bringing that same precision, passion, and global perspective to Woolloomooloo.

We’re looking for a permanent Senior Waiter — someone with a unique flair for hospitality, a calm command of service, and a genuine love for creating memorable moments. If you thrive in a space where every detail matters and every guest feels seen, this is your stage.

Your Role:

As a key member of our small, diverse team, you’ll help deliver an elevated, intimate dining experience — whether for first-time guests or devoted regulars. You are the bridge between the kitchen and the table, and your presence sets the tone.

You’ll :

Welcome and seat guests with warmth, professionalism, and intuitive care

Open and close the floor with precision and attention to detail

Guide diners through our coursed tasting menu with confidence — explaining ingredients, techniques, and pairings with depth and ease - all food and wine descriptions are supplied, however need to be learnt.

Offer wine recommendations and menu supplements to elevate the experience

Serve each course with grace, timing, and a deep understanding of the dish

Anticipate needs, respond with care and professionalism, and coordinate seamlessly with the kitchen

Equipped for fast-paced, high-energy evenings with care, professionalism and precision

What We’re Looking For:

Proven experience as a Section Waiter or Senior Waiter in a fine dining or high-calibre restaurant environment - similar restaurant experience only

Exceptional customer service skills — you don’t just serve, you connect

Strong communication, emotional intelligence, and the ability to stay poised under pressure

Solid wine knowledge and a genuine curiosity about food, cocktails wine and service

Hours: 

Wednesday - Saturday 3.30pm/4pm - close (depending on the evening usually around 11ish pm) First Monday of the Month same hours apply. 

Every Sunday off, great working environment, staff meals included and brilliant tips

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

  • Fine dining experience – Proven background as a Section Waiter or Senior Waiter in a high-calibre restaurant (hatted or tasting / degustation-focused environments are a strong plus)
  • Exceptional service instinct – You anticipate needs, read the room, and deliver hospitality that feels personal, not performative
  • Menu & wine knowledge – Confident explaining multi-course menus, ingredients, and techniques; strong wine knowledge with ability to recommend pairings
  • RSA certificate – Mandatory and must be current
  • Calm under pressure – Able to maintain grace, clarity, and timing during fast-paced, high-volume service (especially our monthly BYO nights - first Monday of every Month)
  • Team collaboration – Works seamlessly with kitchen and front-of-house, communicating with respect and precision
  • Professional presence – Punctual, polished, and reliable for evening and weekend shifts
  • Passion for craft – Genuinely interested in food, drink, and the art of service — not just the job, but the experience
  • Bonus if you’ve worked in open-kitchen or theatre-style dining, where service is part of the performance.
