JOB DESCRIPTION

Full time, 38 hours plus reasonable additional hours | $70,000 – $78,000 + super

Love sushi? Come and own your section:Choice Sushi is a sushi train and restaurant serving fresh, high-quality sushi and Japanese food in a welcoming, vibrant setting. Our guests can grab their favourites straight off the train or order from our full menu of hand rolls, nigiri, sashimi and hot Japanese dishes. Quality and creativity show on every plate. We’re growing, and we’re looking for a skilled Sushi CDP who wants to sharpen their craft, take ownership in the kitchen and build a career with us.

The role:You’ll work alongside our Head Chef and Sous Chef to prepare and present sushi with precision and flair, keeping every dish to a high standard of quality and presentation. Service moves fast. You’ll keep the sushi train stocked with fresh, beautifully presented plates while handling restaurant orders at the same time, without letting quality slip. You’ll keep in close contact with the kitchen and floor teams so everything runs smoothly.

Outside of service, you’ll help keep the kitchen running well. That means managing inventory and ordering, prepping ingredients (slicing, marinating, frying and boiling), monitoring equipment, and keeping food quality records such as rice pH. You’ll also train and mentor our kitchen hands, which is a great chance to build your leadership skills.

About you: You have excellent knife skills, a solid understanding of sushi techniques and a sharp eye for detail. Food safety and hygiene matter to you. You communicate well under pressure, you enjoy working in a close team, and you’re available to work weekends.

Why Choice Sushi:We offer competitive pay and real opportunities to move up within the company. You’ll get ongoing training to grow your sushi skills, and you’ll join a supportive team that values creativity and hard work. With venues at both Marsden Park and Casula, you can work close to home in Western Sydney.
