Hanoi Hannah Vol. II is a fun, fast-paced neighbourhood restaurant in Elsternwick, serving bold modern Vietnamese food, great cocktails and a lively atmosphere where no two services are the same. The Role

We are looking for a confident bartender who enjoys being on the floor, serving quality drinks, supporting their team and creating awesome guest experiences.

Ideally we are looking for someone who has some experience in making cocktails.

Key responsibilities

  • Deliver exceptional beverage service with speed, consistency and attention to detail, maintaining Hanoi Hannah Vol. II's service standards at all times.
  • Prepare and serve cocktails, beer, wine, spirits and non-alcoholic beverages to recipe and presentation specifications.
  • Execute the full sequence of service, creating a welcoming and engaging experience for every guest from arrival through to departure.
  • Develop strong food and beverage knowledge, confidently recommending dishes, drinks and pairings while accurately advising on dietary requirements and allergens.
  • Maintain a clean, organised and well-stocked bar, ensuring all procedures are completed before, during and after service.
  • Complete opening and closing procedures for both the bar and restaurant floor, ensuring all operational and cleaning checklists are completed to standard.
  • Accurately process orders, payments and cash handling using the venue POS system.
  • Monitor stock levels throughout service, restock where required and communicate shortages to management.
  • Prepare garnishes, syrups, batching and other bar components to specification, maintaining quality and consistency.
  • Work efficiently during busy service periods while remaining calm, positive and guest-focused.
  • Support floor team members when required, contributing to a collaborative, one-team culture.
  • Follow all Responsible Service of Alcohol (RSA), food safety and workplace health and safety requirements.
  • Assist with maintaining venue presentation, cleanliness and equipment standards throughout every shift.
  • Contribute to a positive team environment by communicating effectively, supporting colleagues and demonstrating a strong work ethic.
  • Continually build product knowledge across cocktails, wine, beer and spirits to confidently engage guests and deliver memorable hospitality experiences.
